Another super tasty lot from award winning producers Marysabel Caballero & Moises Herrera, this is the essence of chill. A medium roast that lets the origin shine. Showcasing chocolatey biscuit notes that combine well with milk, this bad boy still has enough depth and complexity with rich, dark stone fruit notes, which also make it a delicious black coffee option.
Moises’ and Marysabels’ wet mill in Chinacla, the couple are constantly employing modern production techniques to take the strain off of their local environment, while also improving the quality of their production. Recycling and minimizing water usage and drying coffees on the raised beds in their garden.
This particular lot was depulped and underwent a dry fermentation, in tanks for 16 hours, before the remaining mucilage was removed through a mechanical washing process. After 6 hours of patio drying, the beans are then sent to a mechanical dryer for 70 hours to get the desired moisture levels just right. The final step is for the beans to be placed in sealed bags, to homogenise the moisture levels.
The result of all that jazz, is a deliciously balanced coffee, bringing subtle bright notes which allow for a more mellow flavour profile and a great single origin with subtle fruit notes. It’s a beautifully simple and balanced coffee with crisp acidity & caramel sweetness making for a fine cup of espresso, great to be enjoyed black or with milk.
