Another absolute banger from our mates Raw Material and their OG, Villa Maria project.
Set up a few years ago in Jamaica, Colombia, the Villa Maria station fully embodies Raw Material's philosophy of improving the quality of smallholder producers production, and provide pathways for them to access the specialty coffee market,. This coffee is the perfect example of that as Villa Maria is located in an ideal microclimate to dry honeys and naturals, and act as a hub for Raw Materials experimental processing.
This coffee comes from the Tierra Fria (cold lands), a tiny region with plantations at absurd altitudes, where the combo of high altitude and low temperature, slows down the plants metabolism, and produces super dense and, and insanely flavorful beans.
Following this near perfect growing conditions, the cherries are picked and fermented using Raw Material’s signature anoxic processing method. It’s become a staple processing method of our fruit forward coffees; where the cherries are fermented for 48 hours in a temperature controlled super low oxygen environment, before being slow dried as a natural on raised beds.
The result in this particular instance is a remarkable coffee bridging a ton of vibrant, tart, fruit flavours, with a juicy tropical fruit finish.
