We’ve been properly into decaf for just over a year now, so when this wild wee number popped up, we had to get our hands on it. A rare Pink Bourbon varietal, fermented anaerobically, and naturally processed - this beauty is vibrant, funky and perfect for sipping long into the evening. What's not to love?!
Sourced, once again, through our mates Raw Material, this micro-lot comes from their Villa Maria project in Colombia. Pink Bourbon seedlings were distributed amongst the associated smallholder farmers, who in turn grow and harvest the cherry. Raw Material then steps in to purchase the cherry at a quality premium - meaning farmers don’t carry the burden of post harvest processing, which can be bothe labour intensive and financially risky at a small scale.
After harvest, cherries are taken to La Aurora, the local collection point, before heading a short way downhill to Jamaica—a lower, drier microclimate better suited for drying. Here, the cherries undergo 48 hours of whole-fruit, anoxic (oxygen-free) fermentation before being dried naturally.
And the final twist - decaffeination is done right there in Colombia using the sugarcane process which is awesome at preserving flavour. The result? One of the most outrageous decafs we’ve ever tasted—clean, sweet, bursting with fruit, and full of character. We’re absolutely mad about this one and stoked to be able to share it—day or night.
