Another gem from Roberto Mata Naranjo, one of Costa Rica’s pioneer producers, this ripper is a lip smackingly tasty natural, complex, yet delicate in its fruit notes. We reckon it’s a funkier one, but for the crowds.
Roberto has been producing coffee for over 50 years, and as a prominent figure in the Tarrazu coffee community, he’s been committed to environmentally sustainable practices, emphasising traditional farming methods, reducing the carbon footprint while improving the quality of coffee production.
This particular coffee is the perfect example of his many years of experience. After selecting only the ripest cherries, these little rippers were then washed before being fermented underwater, overnight. Once fermented the coffees were washed yet again, before being meticulously dried on raised beds (being turned every 30 minutes, for 21 days!) to ensure uniform drying.
The result is a coffee rich in delicious fruit notes with a clean and crisp finish. Somewhat strangely for a natural, it’s only subtly funky, showcasing clarity and juicy fruit notes.
