The final summer stunner! A silky, sweet, tropical number from our mates at La Chacra Don Dago in Peru - juicy fruits, a buttery body, and a cheeky hint of hazelnut on the finish. Of course it's summer in a cup, and the perfect send-off as the season winds down.
You already know we're totally obsessed with the Marín family. La Chacra is the brainchild of visionary third-gen farmer Don Dagoberto, run day-to-day by his three sons - Hector, Cesar and Edu. Their whole thing is pushing specialty coffee forward, focusing on true sustainability and quality. It's the only Demeter-certified biodynamic farm in all of Peru, so for two decades now they've gone way beyond organic — running the farm regeneratively as a near-self-sustaining system, preserving native forest, and constantly tinkering with new fermentations.
Tinkering and fermentation being the genius of Hector, this lot gets an extended whole-cherry fermentation in glass tanks, then it's depulped - just enough to leave a substantial amount of fruit clinging to the bean, giving it that red honey character. This is a true gem and the sweet spot of the Dago boys: elevating an already great coffee, giving it all the juicy, sticky sweetness of a natural with the complexity and clarity of a washed.
You can expect a delicate and juicy brew, with soft tropical fruits — papaya, passionfruit, and a slice of melon upfront — rounded out with a sweet and subtle hazelnut. Sweet, bright and dangerously easy-drinking. Get it in while the sun's still out.
