This years final instalment from the legends at La Chacra Don Dago in Peru — a farm we know and love for its pioneering approach and consistently stunning coffees. This lot, Cherry Berry, once again showcases the results of their innovation and knowledge in coffee processing.
The brain child of visionary, third generation coffee farmer, Don Dagoberto Marin, La Chacra (farm) and it’s 50 hectares of coffee forest, is run and managed by his three sons, Hector, Cesar, and Edu.
The Marin vision is to be at the forefront of specialty coffee both in terms of quality and in seeking to improve sustainability from the source. It’s the only Demeter certified biodynamic farm in Peru, meaning for the last twenty years they’ve been going far beyond organic principles of agriculture as they manage the farm regeneratively as a nearly self-sustaining system.
From preserving native forest and biodiversity to experimenting with all kinds of fermentations, the Marin family blends sustainability with creativity. Their commitment means that every coffee from Don Dago is not just delicious, but also a statement of what the future of coffee can look like.
This particular lot, a blend of Typica and Bourbon, underwent a 96-hour fermentation in sealed glass tanks before being finished and dried as a natural. The result is a vibrant, fruit-forward cup: juicy and sweet cherry and blackberry notes, wrapped up with creamy milk chocolate finish.
