From El Trébol, a small 3-hectare farm in Huila, Colombia, grown and processed by Santiago Rodriguez Rojas, and exported by the Cuatro Vientos collective, this is tasty wee sucker is a clean, fruit-forward natural with just the right amount of funky fruit notes.

Santiago inherited the farm nearly 30 years ago and has since transformed it into a small but progressive operation. Inspired by a relative’s success with the rare Ombligón variety, he planted it himself — while also experimenting with fermentation, drying, and post-harvest techniques to bring out its full potential. 

Santiago’s curious and innovative mindset, have created a stupendously tasty coffee. And by collaborating with Cuatro Vientos, he’s been able to bring his small-scale, high-quality production to roasters around the world—and to us at Mood.

Fermented for 72 hours and dried on raised beds as a natural, this coffee opens with a soft, nutty sweetness, then rolls into the ripe, bright, berry fruit notes, and a creamy vanilla finish. It’s got a slight funk from the anaerobic processing, but it’s not overpowering, it’s just enough to add more clarity and complexity to its character.

This is a light and juicy coffee — layered, elegant, and full of character. A perfect filter brew for when you want fruity sweetness, and balance.
