Big on sweetness and super smooth, Choc Bar is exactly what you’d expect from a well produced Brazilian natural. It’s a proper crowd-pleaser that gives a little more, roasted light-medium, it’s great black or with milk. 

This one comes from Fazenda Matão, Marco Guardabaxo's family farm, run day-to-day with farm manager Marciano de Jesus. The pair are all about doing things properly and slowly - home-made bio-fuel keeps the farm energy neutral, native trees are left to hold the soil together, and the 40-strong seasonal crew are paid a living wage on fully transparent terms.

That patience and doing things well is, quite simply, the whole point. The cherries dry slowly on the patio for up to three weeks, then rest a full month in wooden silos before milling - ensuring the beans remain healthy and viable long after harvest, and locking in all those fruit sugars that give us a great end product. 

It’s a classic and a ripper, giving you a super cuppa, full of milk chocolate and caramel with a subtly raspberry sweetness. Great black, just as good with milk, and dangerously easy to drink either way.
