Yet another, banging,  Central American Pacamara Natural. This one has its roots in El Salvador, from the Gullen family farm; La Dalia.  A centuries old family plantation, which now has its own micro mill,  where the Guillen’s have total control right up to the point of exportation. 

The 48 hour anaerobic fermentation, gives heaps  more control to the natural fermentation process, and produces a super clean natural, bursting upfront with tropical fruit flavours, but maintaining a delicate, yet boozy nougat finish.
